Sweet Potato & Pumpkin Curry
Our roasted pumpkinseed protein powder rounds off an already delicious curry, while also adding an extra helping of protein!
- 400 g sweet potatoes
- 2 onions
- 1 garlic clove
- 1 carrot
- 100 g tomatoes
- 2 tbsp. olive oil
- 1 tsp. curry paste
- 1 tbsp. curry powder
- 60 g Pumpkinseed Protein (roasted)
- 500 ml coconut milk
- salt & pepper
Finely dice the onions and garlic. Cut the tomatoes into fours, the carrot into slices, and the
sweet potatoes into cubes.
Heat the oil in a frying pan and fry the onions and garlic for a few minutes, then add the sweet potato cubes and carrot slices and keep frying for about five minutes.
Add tomatoes, coconut milk, and curry paste and season with salt, pepper and curry powder. Bring the mixture to a boil and let simmer for 10-15 minutes on low heat.
Stir in HANS Pumpkinseed Protein (roasted) and enjoy!
Tip: Garnish with parsley and serve with rice.
