Vegan Quiche

Vegan, rich in protein and yummy – that’s our vegan quiche! The vegetable & tofu filling brings a little bit of variety to your kitchen as well. What more could you quiche for? ;)


  • 90 g HANS Power Protein Mix
  • 400 g spelt flour
  • 7 tbsp. olive oil
  • 7 tbsp. lukewarm water
  • Salt & herbs
  • 2 onions
  • 1 garlic clove
  • 1 zucchini
  • 1 leek
  • 250 g tofu
  • 150 ml oat milk
  • 2 tomatoes
  • 1 handful of walnuts
  • 100 g vegan cheese


For the base: For the base, mix spelt flour, olive oil, water, salt, herbs, and HANS Power Protein Mix. Knead the dough thoroughly, then roll out thinly and transfer to a baking try. Make sure to form a high edge all around so the filling doesn’t overflow!
For the filling: For the filling, cut the garlic, zucchini, leek, and one of the onions into cubes and fry with a little bit of oil for a few minutes, stirring from time to time. Mix the oat milk and tofu and bring to a boil, season with salt and pepper, then blend with a stick blender until smooth. Pour the tofu mixture onto the base and spread the fried vegetables on top. Cut the tomatoes and the second onion into thin strips and scatter them over the quiche along with walnuts and vegan cheese. Bake in a pre-heated oven (180 °C, fan setting) for ca. 35 minutes and enjoy!
