Vegan quiche

Vegan, rich in protein and delicious - our vegan quiche combines everything you could wish for! With a delicious tofu and vegetable filling.


  • 90g HANS Powermix
  • 400g spelled flour
  • 7 tbsp olive oil
  • 7 tbsp lukewarm water
  • Salt & herbs
  • 2 onions
  • 1 clove of garlic
  • 1 zucchini
  • 1 leek
  • 250g tofu
  • 150ml oat milk
  • 2 tomatoes
  • 1 handful of walnuts
  • 100g vegan cheese


Base: Mix the spelled flour, olive oil, water, Powermix and salt/herbs, knead well and roll out thinly. Place on a baking sheet and form a high edge.
Filling: Cut an onion, clove of garlic, courgette and leek into pieces and roast briefly. Bring the tofu to the boil in 150ml oat milk, season with salt/pepper and puree. Spread the mixture on the dough and pour the roasted vegetables over it. Cut the tomatoes and an onion into thin slices and spread on the vegetables. Sprinkle a handful of walnuts and about 100g vegan cheese on top.
Baking: Bake at 180 degrees for about 35 minutes.
